Cooking with fresh, organic produce is one of the reasons I love growing my own vegetables. Fresh, healthy, delicious salads are possibly my favourite thing about summer. And with the weather warming up quickly, salad season is here!
This morning I picked some radishes. They were a beautiful crimson colour and I decided to use them right away rather than put them in the fridge. I picked a cabbage a couple of days ago and it was still in the fridge. Bingo! A salad.
I decided to add some coriander and a lemon, also from my garden. I don’t have a lot of coriander at the moment so I used what I had. It is one of those herbs you can adjust to suit your own taste and use as much or as little as you please. A lime would be perfect in this salad but since mine are still growing, I used a lemon from my tree.
Ingredients
1 head of green cabbage – chopped
5 radishes – sliced
juice of 1 lemon
1/4 cup of coriander – chopped
1 tablespoon olive oil
salt and pepper
The verdict
I was very pleased with this salad. It was crunchy, fresh and very yummy. The spicy heat from the radishes worked well with other ingredients. I’d definitely make it again, and play around with it using other herbs and vegetables from my garden.
Sounds like a fresh and yummy salad! I like the addition of the coriander and lime (substituted with lemon on this occasion). A great example of using what’s available to create something new!
